Observations December 20, 2013 - Ragout

Today's observation is quoted with our thanks to WinterGreen48 from a post of May 15, 2008.

The problem with raccoon is that the meat is kind of stringy, and to enjoy it properly you should first marinate it (you can use Road Kill Barbecue Sauce as part of the marinade, but it is not necessary) for a few hours, then braise it in a nice sherry ragout.
