That sounds pretty good!
I cook three times a week and have leftovers the next day. This week's meals are:
Pecan-Crusted Salmon & Sweet Potato Fries
Apricot Chicken with Couscous & Roasted Green Beans
Beef Yakisoba with Snap Peas & Mushrooms
That gives me one dinner per week to get pizza or something else delivered.
I may not have gone where I intended to go, but I think I have ended up where I needed to be.
