I believe that's part of the original Riverdance program, a segment called "Trading Taps." Yes, I saw the show 3 or 4 times, but that was just one of many highlights.
IIRC, Michael Flatley's subsequent show and a few others had similar segments, too.
Savion Glover had a show in L.A. about 20 years ago, "Foot Notes," where he illustrated different American tap influences and styles over the years. That was something to behold, too.
