As long as I'm not on the menu.....
Squirrels are the architects of forests, the planters of trees, nature's own acrobats and show a zest for life that can inspire us. Every day should be National Squirrel Appreciation Day!

Many of these (squirrel) migrations were probably caused by food shortages as well as habitat overcrowding. We solved that for them. We not only reduced their habitat, we reduced the whole species by about 90%. The least we can do now is share a little birdseed with them.

FRIED SQUIRREL WITH BISCUITS AND GRAVYEvil Squirrel wrote:christie1111 wrote:Party in the Lounge with blackberry margaritas!

As long as I'm not on the menu.....
Prep Time:
Varies
Ingredients
4 squirrels, quartered
3/4 cup all-purpose flour
1 tablespoon salt
1 teaspoon pepper
4 slices bacon, cut up
1 egg, beaten
2 tablespoons butter
2 apples
1 orange
1 white onion
Biscuits
1 cup self-rising flour
1 1/2 cups buttermilk
2 tablespoons shortening
1 teaspoon salt
Directions
Cut up apples, onion and orange and place in a crock pot
Add squirrel
Cover with water and cook till meat becomes tender
Check frequently since all squirrels do not tenderize at the same rate of time. Do not allow squirrel to over tenderize and fall apart.
After meat is done, remove and allow to cool completely
Mix salt, flour, pepper in a bowl
Dip dry squirrel quarters in well beaten egg and dredge in the flour mixture
Place bacon and butter in large iron skillet and heat, then add squirrel
Fry on very low heat uncovered till brown, about twenty minutes on each side.
Biscuits
Mix dry ingredients and cut in shortening
Add buttermilk and fold dough by hand
Place dough on floured surface and flatten by hand to a thickness of about 1 inch
Cut biscuits with a floured cutter or drinking glass
Bake on top rack at 375 degrees till tops are golden (about 10 minutes), remove and spread butter on tops and replace in oven for another five minutes or till brown.
Gravy
Remove fried squirrel, pour off most of the grease leaving a little for gravy base
Brown a small palm full of all-purpose flour and grease, add 1 cup of cold water and stir
Salt to taste.
Serve with rice.
NOTE: If one appreciates the natural game flavor of squirrel the apples and oranges should not be added in the parboiling process since these remove the wild taste from the squirrel. Serves four.
I believe in the usefulness of useless information.

I am indeed back, although I'm a little zoned today. After being up 25+hours -- from 4 a.m. yesterday to 5:30 a.m. this morning, I netted three hours sleep before the dogs woke me up. For that reason, if the delicious-sounding squirrel is on the menu, I would like to send Annie and Lizbit to represent the Camaro clan, while I take a nap.

Shiny Car is back? What about me, Shiny Dog?
I want to go to that party whether my mom goes or not. I think the menu sounds quite tasty. I like apples and oranges. Heh.
I'm kind of miffed at my mom, anyway. She took my laptop, then didn't even post for a week. She's probably got some feeble excuse like no wireless service or something. Anyway, I missed the chance to answer a bunch of QoDs, and I'm behind in my classes at Yale. I will be doing physics problems and reading poetry all weekend!

Thank you, Evil. I missed barking at you, too. There were some barkable cats across the hall at the hotel, but two of them were baby kitties, so I felt like I needed to hold back on my most colorful vocabulary.Evil Squirrel wrote:AnnieCamaro wrote:Shiny Car is back? What about me, Shiny Dog?

Annie, I'm glad you have regained use of the laptop, you were missed, as was your Mom. I hope you're letting her sleep and recover from her trip. I was going to try and catch up to her so I could keep an eye on her for you, but it didn't work out. SOmetimes family just gets in the way of fun, you know?

Annie, that was sweet of you not to bark at the baby kitties. Their ears are very small.

Some of them get scared easily, too. Some of the littlest ones get scared at the sight of me, because I am a big girl. Me! I always try to lay down if I see a baby cat who doesn't know me yet, so I won't seem so tall. Being tall comes in handy the rest of the time, though.Ritterskoop wrote:Annie, that was sweet of you not to bark at the baby kitties. Their ears are very small.

I would never think of suggesting such a thing. I thought maybe you might have the cafeteria concession there. Hey, I was gone a week and no one had drinks to celebrate my return.
I'm just sayin'...
Maybe it had something to do with the fact I posted everyday while I was gone. Even when stuck in the 3 1/2 hour traffic delay, I could post from my Blackberry. That's what I'm telling myself anyway so as to not bruise my ego.
