Virginia - God's Country
The Commonwealth sponsors an annual Virginia Food and Beverage Expo, which of course highlights all the gourmet delights that Virginia has to offer.
We are big on barbecue hereabouts, and the Best New Product Award went to [drum roll] Road Kill Barbecue Sauce. They were helped to first place by their slogan: Makes Raccoon Taste Almost As Good As Possum.
Actually, even without Road Kill Barbecue Sauce, raccoon tastes every bit as good as possum: the problem with raccoon is that the meat is kind of stringy, and to enjoy it properly you should first marinate it (you can use Road Kill Barbecue Sauce as part of the marinade, but it is not necessary) for a few hours, then braise it in a nice sherry ragout. Then you just slap that critter on the grill and you are good to go.

Raccoon is one of the few things that I have never eaten.
Possum is, in fact, greasy. Not too bad in stew.
Squirrel is all right. My granddad used to grill up some squirrel and it was pretty tasty. He would boil the squirrel for a while with spices before cooking it. That probably helped.

Ummm, you "shuck out" squirrels. That is not a pretty picture in my mind. Don't think I'll be eating any squirrel any time soon.
