Didn't even know this was a thing in NH. Must be a large contingent of Quebecois in the state.

I go up to the Adirondacks in northern NY quite a bit. We often fly into Burlington, VT. There is poutine all over the place. New Hampshire should be similar.
The Canadians, and definitely the Quebecois, probably don't think much of it but it is definitely better than the poutine I used to get in Michigan. And they certainly don't try to doctor it up the way they do in a lot of the U.S. places that try serving it.
I hang out at a hockey bar here in Houston that is run by Canadians. They have resisted serving poutine because the cheese curds they could get aren't quite right. That hasn't stopped some hipster gastropubs in town from serving it but they can't resist trying to "improve" it.

I'm glad to see that they have actual poutine, in addition to the variations.
