Pigs Feet and boiled peanut

those were part of an appetizer called pigs wings, featured at Chef and the Farmer Reaturant in Kinston, NC. So we had to order just so we could talk about it. It as actually pretty tasty. The rest of the meal was much better, especially the other appetizer, which was peaches with goat cheese and ginger. I had the brisket and it was outstanding. The service was very good. Musso and Frank's level good. Vivian Howard is a regional celebrity chef.

The chef in the restaurant's name has a whole PBS series about her. Maybe 2 or more. Cameras follow her around as she visits older people in her part of the country who help her recreate food she loved as a child. Most of which is pork, pork, & "let's pour a bunch of lard on that". Which, as someone who doesn't eat pork, doesn't much appeal to me unless I can figure out how to make it work without the pork products.
Its a relief to hear she's actually got something I could eat on the menu, except she probably poured bacon all over the brisket. Lidia Bastianich (one of PBS's Italian chefs) does that too; removes the beef tallow from her meatballs, then adds back bacon fat to "make it tasty". So now I have to fear Italian restaurants too.

What were you doing in Kinston? You were right in my neck of the woods. I live in Goldsboro, only 20 minutes west. My wife's father and Vivian's father go way back. Her father was a farmer who made his money and was wealthy. Vivian went away to culinary school in NY (maybe CIA, but my wife is not sure) and came back and has worked to put Kinston on the map. Chef and the Farmer is a local landmark and she tries as much as possible to use locally grown and raised products.

I gave Tami a gift certificate for CatF for Christmas and we just got around to using it. We also toured New Bern. Tami grew up in Plymouth so it's her neck of the woods.

The pigs feet in the jars of pink liquid at a certain kind of store always creeped me out - is that vinegar?
Never cared for boiled peanuts, either, though roasted peanuts can be nice.
I'm glad you enjoyed your treat! Eastern NC is a fun area, foodwise.

Once had some visitors from South Australia visit. Went with them to a local convenience store, they we facinated, but the jar of Pickled Pigs Feet just stopped them in their tracks. They wanted to buy chewing tobacco to take home.
As we drove about, the Aussies wanted to know what was behind all those trees. Of course the answer was "more' trees"
