I heard a stewardess interviewed about this. All airlines did it. They would tell you they dressed the person up to give a semblance of life, so as "not to disturb the other passengers". Gee, I hope they at least moved the people in the next seats. Except some times the plane is so packed that you can't.

They usually also put a blanket over the dead person's lap because dying people sometimes lose control of bladder/bowels. The newspaper also served this function. I don't think a blanket/newspaper would begin to, uh, cover this.
