This is an air show demo of the capabilities of the Boeing 787-9 Dreamliner. I assume this fuselage was never dumped in a river...
The initial take-off looks like what it feels like to take off from John Wayne/Orange County/Santa Ana Airport.

Why did he have his landing gear out?

Pretty sure that Boeing requires the landing gear be out for all take-offs and highly recommends that the gear also be out for landings.

Ha, ha. I meant in-between the two.

I didn't see where the gear was ever out that was not part of an 'approach' to land. Where in the video did you see it? There was one part where the pilot shot a landing then circled tightly around for a final landing and he never retracted the gear. I consider the re-takeoff and circling as a continuous approach.

He did an intentional "touch and go" (with the grace of a ballerina) to show off the handling of the aircraft and an immediate hard turn to starboard before coming in for his landing. Kinda need the landing gear for that. Scratches the lovely Boeing livery on the bottom of the fuselage otherwise...
Landing gear went up halfway through the near vertical ascent at takeoff and did not come out until he was preparing for the touch and go and landing (about 1:20 in the short version or 3:30 in the full length video).
The raked wingtips and slightly upswept wing design is quite attractive!

I am thinking the pilot had fun doing this demo.

I am thinking there is very little doubt about that!

There is a new video making the rounds. This pilot was practicing for the 2015 Paris Air Show.
