Job search - continued

The gas from the manure farm horses continues. Finally got an official FOAD letter from one of those early interviews. Not planning to bother asking about the other one. Had a phone interview a couple of days ago that ended with a discussion of my potential commute. That F2F interview is now scheduled for next Wednesday. Another recruiter-originated interview is next Friday, bypassing the phone interview entirely. Today, I had an in-person interview that came from a phone interview before my Thanksgiving trip. That one is a consulting job, through a different consulting group than my last contract.
However, I made the mistake of telling the consulting recruiter that I had the other two interviews next week. Next thing I know, the original contact from the group called me in a snit that I hadn't told them I was looking for other jobs. This was not true, and it turned out she had confused me with someone else. Even so, she seemed upset that I wouldn't immediately accept their consulting job (not even offered yet), and how they couldn't wait for me to decide, and so on. I told her, after explaining that I had been actively in the job market since at least mid-September, that I was keeping my options open and wanted to pursue these other opportunities before accepting their (unoffered) job.
I'm a bit ticked off about this. I'm still not sold on consulting because of just the situation I'm in - no new contract or job available when another ends (which I also explained to the recruiter). I thought I was being reasonable with her in my explanation, but she still seemed astounded that I wouldn't immediately take their contract job. The attitude was like "How dare I not take this job? Yes, they've put in some work here, but as the manure farmer said, I can't live on promises. I gotta think of what's best for me. That still may be the consulting gig.
But if I get better offers for full-time jobs, or better offers, period, well, how is that any different than making any choice from among several options?
