I guess we still hang on to some things from our British heritage. The day before Ash Wednesday has always been "Pancake Tuesday". Many churches and charities such as the one my daughter works for always have Pancake Tuesday lunches and dinners to raise money. I had no idea that this was not an American thing.

It's done in Russia too and is called Maslenitsa (maslo means butter, but they eat blini (pancakes)).

Lithuania, also: our pancakes are similar to (but much better than) the Russkies', we call them blynai. You actually start eating them the Thursday before, and then really pig out on Shrove Tuesday (Užgavėnės); based upon the way some people do it, I think that the pigging out is intended as a way to eat, in one day, all that you cannot eat for the full forty days of Lent.
