This will be interesting tomorrow. It is my understanding that aïoli is made of olive oil, garlic, salt and egg. Adding mustard is optional, but not all aïoli contains mustard and, if present, it is certainly a minor ingredient. I assume that is the answer for which they're looking.

You're probably right. I just looked it up on wikipedia. The first two pictures look like what I've seen before, yet the third one (with olives) definitely looks like mayonnaise. Mayonnaise is mentioned in the 2 other regions, but not under Provençal cuisine.

I think that because Provençal aïoli appears to be a garlicky, oily sauce rather than a mayonnaise and because mustard is included as an option and is often added as an ingredient, this question sucks...

Egg and oil and a few flavorings is pretty much all mayonnaise is. I was amused a few years back when there was a recall of some brand of mayo for "unreported eggs" on their ingredient label. Kind of like unreported nuts in a Jif label.

Get it ready. Aïoli is a mayonnaise substitute and not whipped like mayonnaise. This is a terrible question but I expect them to say the answer is mustard.

If we're taking bets, I'll side with gsabc. Oil + eggs = mayonnaise.

Is frogman going to have a twinge of pain when he sees the word "traditionally" in the question?

We've been waiting almost seven years, Meredith, for a legit, "fifteen correct answers" millionaire ...

The problem is that eggs are as optional as mustard.

The real question is it served over mushrooms or french fries (or pomme frites)?

In the words of the character "Patsy," from Spamalot: "Aioli is a garlicky 'mayo-nez' used in some seafood dishes."

Did we lose some posts, or am I dreaming?

Anyway, I know the word we're debating from Scrabble; it's a pretty famous
Spoiler
vowel dump
.

Not that the Scrabble dictionary is a legit reference, but their definition is "
Spoiler
garlic mayonaise
". That's where I know it from. The posts on this thread have shown me that putting "
Spoiler
mustard
" as one of the choices is a very bad idea, as it is often added.

As I said though, I'll bet the "correct" answer given on the show today will be "
Spoiler
mayonaise
".

More Scrabble fun: according to scrabble.com (North America), you can extend
Spoiler
AIOLI
to
Spoiler
MAIOLICA
. That's good to know.
