Super easy, very delicious fudge recipe.

Fannie Mae Fudge
1 stick of butter
1 12 oz bag of chocolate chips
1 lb. confectioners sugar
1/2 tsp. vanilla
2 eggs
Melt butter in sauce pan. Add the chocolate chips and stir until melted. Remove from heat. Add vanilla and eggs and beat well (mixture will be quite shiny). Add the sugar. Pour into a buttered pan. ( I use the foil fudge pans.)
Due to the uncooked eggs, the fudge should remain refrigerated until you're ready to eat it.

I do in fact! The only issue I have with this recipe is the consistency. I used reduced fat peanut butter last year and it was too soft and made the fudge too soft. My guess is the thicker the consistency of your peanut butter, the firmer your fudge. Enjoy! Takes about 6 minutes to make.
Peanut Butter Microwave Fudge
2/3 c. Peanut Butter
2/3 c. Butter
6 cups confectioners sugar
1/2 cup milk
1 Tbsp. vanilla
Microwave the butter and peanut butter on high for 1 and a 1/2 to 2 minutes. Stir in all remaining ingredients. Microwave again for 1 to 1 and 1/2 minutes on high. Pour into buttered 9" square pan. Refrigerate to set.

I also have a very yummy cut out cookie recipe for decorated xmas cookies. Will post if anyone is interested. The great thing about the recipe I use is that the cookies are not terribly sweet so once you add the decorations they're still palatable and not so sweet they're locking your jaw.

GW makes the Marshmallow Fluff version. No redeeming nutritional value whatsoever, but who cares? It's Christmas!

Me! Me!
SPent last evening mixing, rolling, cutting and decorating gingerbread men. My 4 yo niece wanted to make cookies and I made the mistake of letting her choose what kind, thinking she'd pick chocolate chip. No such luck. I will be finding sprinkles in places I didn't know were places for months to come.

Cream Cheese Cut-Out Cookies
1- 8 oz. package of cream cheese
1 cup of butter
2/3 cup of sugar
1/2 teaspoon vanilla extract
2 and 1/4 cup flour
Dash of salt, if desired
Combine softened cream cheese, butter, sugar, and vanilla. Mix until well blended. Add flour and salt and mix well. Chill an hour. On a lightly floured surface (use a marble board if you have one as these remain cool), roll out dough to 1/8 inch thickness. [If dough becomes a bit sticky, just put it back into the refrigerator to chill it a bit more. When the dough is cold and firm, it is extremely easy to handle.]
Cut with assorted cookie cutters. Place on ungreased cookie sheet. Decorate with colored sugars or candies, if desired. Bake at 375 degrees for 8-10 minutes or until edges are golden brown.
I frost them with a very light layer of simple powdered sugar/milk with food coloring. I use a small watercolor paintbrush to add detail (that frosting is just a thicker version of powdered sugar/milk). My son does the wash of frosting and then adds sprinkles and candies and all that stuff. I use the small and medium sized cookie cutters so the cookies are more bite sized. These, the peanut butter hersheys kisses cookies and the two fudges are a great combo platter to give to folks and take to get togethers during the holidays.

I will try that recipe for peanut butter fudge. I will wait until I have some place to bring it. Otherwise I will eat the whole thing all by myself.
