Comfort food

Yesterday I made baked potato soup. We'd had some from the grocery store and it was excellent. I thought, "I can do that." So, I did.

It was a hybrid of two recipes pulled off the innernets. I doubled everything. One recipe called for half and half and chicken broth; the other, 7 cups of milk. I ditched the chicken broth, because, piffle. Dairy is better than chicken broth any day. Two cups of half and half and 8 cups of milk.

After I baked the taters and started peeling (you're supposed to peel them?!) I thought, "Skins are the best part." Therefore, I included some in the soup.

Onions, celery, green onions, flour, milk, sour cream and eight hundred pounds of cheese later we ate.

It was/is awesome. It's horribly rich and fattening and garnished with cheese, bacon and more onions is worthy of all-meal food status. I had it for breakfast.

I made potato soup yesterday as well. Next time add the chicken broth it adds a richness that
you will like. Trust me on this. I put fresh grated parmesan cheese and just a touch of red pepper
in mine.

Ooh. Parmesan. Yum. And pepper. Yum. I thought about popping the bouillon cube in just on general principles, but I had so much liquid I didn't want to add more. Then I forgot about the cube.

If it were in my house, I would eat it for every meal and every snack until it was all gone.

There is a new little soup-and-salad place on the next block up from my office. I can pick up a generously sized bowl of soup and 2 fresh breadsticks for 4.99. My favorite soup is their baked potato, with tomato basil a close second. I never go anywhere else for lunch now.
