Cool story about Tom, but Alice Waters doesn't know the Heimlich maneuver? Shouldn't every restaurant owner/chef know CPR and how to aid a choking victim?

Alice Waters is pretty small. I know that in theory everyone can do the manuever, but I do think a bigger person has a better chance to be effective.

I was Hiemliched more than 20 years ago - we were at a steakhouse in Omaha and I am grateful our waiter was a big manly type at the steakhouse (I'm not exactly tiny). As my dinner mates were trying to explain my problem he looked at me stepped behind my chair, and dislodged the offending morsel easily. I cut the reminder of the steak into much smaller bites.
A little more than a year ago the mrs and I ate at Craftsteak - Collichio's restaurant in the MGM Grand in Vegas. It was one of the two best meals we have shared.
