On the menu tonight

The Golden cauliflower I bought last night. (I don't expect the Purple cauliflower sold anywhere near as well!)
Beef Tamales.
Rice.
Chips & Salsa.
Steelers Black & Gold Super Supper Casserole
Cut 2 strips of bacon into small bits and cook in large skillet
Saute 1/2 medium onion, chopped, with the bacon & drippings
Add 2 cans of black beans, drained, mix in with bacon & onion
Add one can whole-kernel corn, drained, on top of beans -- Do Not Stir! It should be black & gold layers.
Cook over low heat till hot
Add 1 small can sliced black olives -- again, Do Not Stir!
Top with 1 cup of shredded cheddar, colby, or any favorite yellow cheese
Cover & heat just until cheese is melted.
Yum, Yum!
