We made not so great chili

In this case, chipotles would have improved the product. Jeff chopped up a bunch of turkey and just did the Two Alarm crap with tomato sauce, beer and water to get something cooked before the guys took off. He makes a wickedly good chili with 900 ingredients, but that wasn't possible, so we did what was expedient.

Actually, neither roasted red peppers nor chipotles nor scotch bonnets nor killer Thai peppers nor acres of cheese could help this grotesquerie.
Well, then

The Two Alarm stuff can be made better if you use diced tomatoes instead of tomato
sauce. I use the kind that has the chili seasoning in them and sometimes I add a can of Rol-tel
tomatoes if you want it to have a little more of a "kick".

We used to do the Two Alarm stuff all the time, but just didn't have time today to do it right. Sometimes eating something else is a better choice.
