First off I'm going to scrape Beebs' leavings off any surfaces potentially adjacent to food items. Then I'm going to quaff some cheap wine. Then, I'm going to ponder food. Some more quaffing. Ponder. Quaff. That's it for preparations.

You know very well one doesn't "control" one's minions. One dices them finely to add to the stuffing.

NOT IN A PAN BY ITSELF!!!
Who cares whether the turkey is dry? I don't even particularly like turkey. It is but a vehicle for THE STUFFING. But, if I had to guess about moisture and all I'd say apply some Oil of Olay Regenerist liberally (SEE! I said liberal.) and lie down for a bit for it to soak in and then go eat some more stuffing.

I haven't got time to expound. There will be lots of delish foodstuffs prepared by me. Minions are for sissies. It will almost all get et, except for an errant devilled egg that always seems to be left behind. And the one item that is invariably forgotten in the garage refrigerator until just before the end of dinner, whatever that may be this year.

I suspect what you are going for here is deep frying said bird. It does make for a mighty juicy and succulent outcome.

Make sure bird is COMPLETELY thawed and patted dry of excess moisture. Drop that sucker in the deep fryer. Let 'er cook. Then call 911 since you've prolly burned down half the neighborhood in the attempt.

Brining results in a Most Fabulous and Delicious Roast Turkey Dining Experience.
Mix together in a big pot about 2 gallons of cold water, some salt, maybe a couple cups, about half as much sugar as salt, then spices -- bay leafs, sage, garlic, allspice, basil.
Put the turkey in, making sure it's submerged, and soak it for at least 24 hours.
Take the turkey out of the big pot and pat it dry.
Roast using your preferred method.
Yum!

We have used a kitchen trash bag (the plain kind, not the ones with scents or sanitizers) for the brining mixture and bird. Twist-tie it tightly shut, and then let it sit in the sink for the required time. We don't have a pot big enough to hold a turkey of any size, let alone the brine.
There are numerous brine recipes available on the Internet. I have no idea which one GW uses.

No, seriously, I am in charge of making Cheddar Cheese Soup per the recipe of La Cellier Rest. in EPCOT at Disney. It is tasty AND artery clogging. You would like it. It has bacon.
We are having two chilluns with spouses and 5 grandchilluns, and my brother and his wife over, to add to the one chillun still at home. I have a goodly supply of earplugs at the ready. I will eat much turkey. With any luck, I will be asleep by 4pm. At that point a gamma ray explosion (which is roughly the decibel-equivalent of said 5 grandchillun) would not rouse me, although it may turn me into the Incredible Hulk. Actually, eating all that turkey would also turn me into the Incredible Hulk (or is it Incredible Bulk?)

I read something about this involving heavily salting the bird in some manner, bagging and soaking it. They told you how to do it, but it went in one eyeball and out the other, as I do not cook the turkey and am trusted only with soup detail. The turkey is Nancy's deal, and I am smart enough to know that offering any "counsel" may make me wish I could change places with the turkey.

4 quarts of water
1 c brown sugar
1 c kosher salt
Pepper if you want
I use the turkey roaster bags. They come two to a pkg. I don't use them to roat the turkey.
Put turkey and brine in one, then put the whole bag (with turkey in brine in the next)
And then put them in the roasting dish. A belts and suspenders approach for sure!
I do rinse and dry before baking.

No, I do not use the bags to roast.
I prefer to be able to baste it occasionally. I put chopped up onions and carrrots and celery on the floor of the roating pan. Add a couple of cups of water. Put the bird on top and roast according to your plans. About after an hour, then every half hour or so I use a pastry brush to baste the turkey.
How are you feeling about the gravy?
Confident? I thought SC told you the place to look up the recipe.

Pretty pitiful when you have to study to make gravy! Yes, I got out the Better Homes and Gardens
cookbook. I think I'll be fine. I bought turkey wings today as well. I'm as ready as I'll ever be!
