Because of that, Wyoming requires the full Bar Exam.

I have only visited Casper a few times. It is a city of just over 55,000.

Okay--make the restroom ADA compliant and serve breakfast. Make the best pancakes in the whole world so people on the other side of the country still talk about them every once in a while and try to duplicate them, even if they aren't usually the type to eat breakfast and usually go easy on the carbs.

There's a place named Star Bakery in Nevada City, Montana (a ghost town, no less) that fits that description. Nothing fancy but the kids still rave about the lemonade and I would go out of my way for those pancakes. Plus they have fried pickles.

If you decide to go for it, best of luck! And put cloves in your pancakes...

The ADA isn't the only issue with the bathroom. The only bathroom in the bakery area is behind the kitchen. So, it wouldn't just be a matter of bringing it up to ADA requirements. We would have to find space for, and build a completely new bathroom that would be accessible to the public. There's simply not enough room to do that.

What is on the menu and does that bakery also do catering and weddings? How did you find out about the bakery and did you consider Dallas?

A little story:

My cousin, Johnny, Aunt Lucy's oldest and TLAF godson, was a vice president for Rainbo Bread. His job was to look for troubled bakeries that could be converted to Rainbo facilities (thus keeping the workers employed).

At the time, they were based in Richardson, Texas. Johnny and his wife, Joan, are both Northeast Philadelphia natives. With the exception of our cousin Billy in Detroit and his sister Mary, who is in Phoenix, every one of their brothers, sisters, nieces, nephews, aunts and uncles live from Central NJ to Wildwood, NJ.

In his journeys, Johnny found a charming bakery outside Harrisburg. He suggested it for a Rainbo Bread plant. Rainbo said no.

Johnny, having been very impressed with the work ethic of the bakery workers, decided to take a chance and buy it himself.

In the intervening years, Specialty Bakers has added a second shift. Then a third shift for the holidays.

And we get to see Johnny and Joan a lot more often. Which makes Mom and Aunt Lucy (and Boonie and me) happy.

SO....I have a marvelous track record of knowing friends/relatives from Texas who move closer to family and start a bakery. :D

No matter what the size.

The current owner/baker is going to provide support for 12 months. We get all her recipes and business contacts and existing contracts. Right now, she only does custom orders, catering, and contracts to provide bagels to other retailers in town. She shut down the retail store in January 2011. We will be reopening for retail as soon as we can.

Sounds like a great foundation for the first year!

Combined with some custom cake orders which could give your wife some creative outlet, it could be the perfect mix.
