Ellyn knows me well. :) If we're talking after snacks, a Brandy Alexander rocks as well. Mucho calories, though, especially since I prefer mine made with ice cream.

Have I mentioned my baked goat cheese?

Center the cheese in a small baking dish, rub with EVOO and sprinkle with some Mediterranean herbs. Put about a 1/2 inch of EVOO on one side of the cheese and about 1/2 of balsamic vinegar on the other side. Bake at 350 for about 15 minutes.

Serve warm on toast points.

Yum!

She has had a nice girl trip the past few years. I think they end up in Wyoming. (and quite possibly started out there!)
