Ahh! I wish I had this stack yesterday... being from Wisconsin, I learned the cheese answer in grade school.

Skip's a great guy. He was a lot of fun in the green room, kept everyone entertained for that grueling 6 hours of isolation. Congrats on the winnings

Skip mentioned at that point that he can't say the name of the boat he used to perform on.

Why the hell not, TPTB? John Henson is using every opportunity he can to plug his regular gig!

I would have crashed and burned on this one. I associated "havarti" with "Helvatia" (an old name for Switzerland) and would have made that my final answer.

No, his family tree is filled with royalty and other famous people. I just have farmers and other boring folk in mine.

Well, there's one 18th century ancestor who had a distinguished title that's something like "county tax collector".*

*No, Google says that should really be "District Revenue Officer". I think the job was the same, though.

I had no idea the name of the swiss cheese was emmentaler...but I know I like havarti, gorgonzola and muenster, and don't like swiss...so that is how I would have come to the correct answer. :)
