chicken taco soup

chicken taco soup
It is in the slow cooker, my second try at it. The first try was oatmeal, which was, well, oatmeally. Better than instant but still tasted like oatmeal.
This stuff is a can of this and a can of that, one of which I was supposed to drain but dint (the corn). But the tomatoes with chilies was to be undrained, so it will just be a little soupier than the recipe indicated. In five hours I will take out the chicken and shred it, and add cheese, which if there were not cheese I would not be making it.
Per Kay's instructions, instead of beer which I hate, I used a cup of sauvignon blanc which they recommended drinking with the meal. I paid $15 for the bottle, which was more than some and less than others, so I hope it was a reasonable choice. The bottle does not fit in the fridge door standing up, so we may have to indeed drink it rather than leave it on the bottom shelf lying down too long.
Which would not necessarily be a bad thing.

I am dying to find more slow cooker recipes that I can use during the week. I'm usually out of the house for a minimum of 10 hours, so anything that isn't a soup or stew tends to turn to mush after that long. So I don't use it and usually get take out from Whole Foods instead.

This one is 7 hours, but you have to mess with it after 5. I guess you could shred the chicken first, though, and then add the cheese and sour cream at the last minute.sunflower wrote:

Mine switches to warm after the set number of hours. I will have to look to see if it can be set to warm for the duration. The problem is, 4 hours on warm when it's done still does damage. Several users substituted chicken broth for the beer. I may have been the only one to use white wine.
But there was a slight something roomie dint care for, and that may have been it.

Mine does either 4 or 6 on high, or 8 or 10 on low. It's good bacause I'm...well...vague on when I'm coming home and when I need to feed everyone sometimes.
I have a frozen turkey breast cooking itself now, 10 hours on low, but it'll probably be done before 10 hours. I just have to leave this afternoon to go to a meeting at Rain Man's school, then he has to be at a different school at 6:15 for a concert, so he's getting a bakery cake and I'm just starting something to feed people whenever they're hungry. Steve won't get back until the concert starts so he won't eat until late, and the rest of us will eat early and....

I've never made chicken taco soup, however I do make lentil soup quite often and I always put white wine
in it. I seldom use a crock pot though. It doesn't taste funny, but we all have different tastes, so who
knows? I just don't think red wine would do well in a chicken taco soup, but it might. It could be the
temperature in a crock pot is not hot enough for all the alcohol to burn off like it does on the stove top,
although I almost always use red wine if I'm cooking a roast in the crock pot as it helps make it tender
and it always tastes fine.

I dint drain the corn either, I put in two regular cans of stewed tomatoes, and I dint add the beer, wine, chicken stock, or anything else except the extra tomatoes and a can of garbanzo beans.
