I rock tonight. For at least 15 minutes. After cleaning bits and pieces of the house I decided to cook up the chicken breasts and spinach and mushrooms that we had. Jeff got some capers and lemons to finish off the recipe.

It's my version of chicken piccata and it was perfect. I did it right, for once. Beat the shit out of the chicken breasts, season salted them with pepper, dredged in flour, covered in a bit of parmesan, with the extra parmesan for dumping on later. Refrigerated for a bit while we did a crossword puzzle.

Sauteed mushrooms in garlic and butter, added the spinach. Let it wilt.

Heated the olive oil and butter til hot, FINALLY, I usually don't let it get hot enough, and fried the breasts and with the added parmesan achieved the appropriate crispiness. Removed them and added thinly sliced lemons and capers and deglazed only enough to not burn everything.

Served with some rice, which I can't cook worth beans, but it was edible, at least not mushy and all together the chicken and spinach were restaurant-worthy.

Yum!!

Rob and I make almost the same thing...except he doesn't like spinach so we usually add either black olives or artichoke hearts instead of spinach. I will have to try it with parmesan too, we never do that! Thanks for the good idea!

(I will not be depressed that I ate ramen noodles for dinner...)

Lol...I just had too many projects to do around the house, so I didn't want to cook anything significant. I classed them up by eating them with chopsticks...

But now tv is getting the better of me, I'm tired and parked on the couch with the laptop!!
